Saturday mornings







We really like pancakes around here on Saturday mornings.

It doesn't happen every Saturday but that keeps it special.

Some plain and some with chocolate chips.

Adrian is almost all of the time our pancake maker around here and I am oh so thankful!

We got a griddle as a wedding gift that we really, really like.
It's a cuisinart. They're are not paying me or anything to say something nice about it. I'm just telling you because I like it.



Here is our recipe in case you're interested.

old fashioned pancakes

INGREDIENTS:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted

DIRECTIONS:
1. In a large bowl, sift together the flour, baking powder, salt
and sugar. Make a well in the center and pour in the milk, egg and
melted butter; mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high
heat. Pour or scoop the batter onto the griddle, using approximately 1/4
cup for each pancake. Brown on both sides and serve hot.

Yum!

They freeze well too fyi.

edited 1/29/11: What a difference a few days make. This photo was taken last Saturday and I wrote the post mid-week and set it to publish this morning. On Thursday night we found out that the little guy is sensitive/allergic (still learning about all this) to milk, egg whites and wheat. :(

Big bummer.

As I am still nursing that means that currently I am also not eating foods containing milk, eggs and wheat. This is a crazy journey to be going down and one I had frankly very much hoped we would not have to. I have a lot of different emotions about the whole thing and not much info/knowledge. I want to learn more and know the facts (although it seems that with food allergies things are never really cut and dried).

Anyway, if you have been down this road before or know people who have or have any ideas of foods/meals that can be eaten that don't contain eggs whites, milk or wheat it would be very much appreciated! And prayers too. Thank you!!!

p.s. also if you're local and know of a good allergist or have advice on finding one that would be appreciated. Thanks!

those look yummy!! I just love the slower start of Saturdays....especially ones where the start doesn't really have to happen!! like today - I have nowhere to be until dinner this evening, so I'm still in pjs, running laundry, about to go scrounge some breakfast and read.

We had hubby-made pancakes today too! With chocolate chips and peanut butter.

When the girls were little, Saturday were our errand days whether there were actual errands to be run or just getting out of the house and eating something cheap & fun.

Jes makes our pancakes around here too. The girls insist on chocolate chip pancakes every Saturday. On weekends when we are in a hurry we switch out for chocolate chip muffins. But either way the girls insist on chocolate chips every Saturday. And I will say that the only chocolate chip pancakes that I ever ate were made by your mom, so I will give her all the credit for that tradition at our house. :-)

Oh Kelly! About the allergies, I feel for you!! Sorry it has to be this way, the Lord must have a plan though. My sister was born with several allergies (dairy, wheat, eggs, etc) It took a while to figure everything out but finally Mom did and was able to diet and continue nursing. It is amazing though what my Mom did for that poor little girl. She was super allergic and would break out from head to toe.
So did you have your little man allergy tested or how were you able to find out? My prayers are with you. I'll check with my Mom and see if she still has all her "safe" recipes, if you are interested. God Bless you all!

Those do look yummy! We love our griddle and pancakes too! My kids even beg for whole wheat, ryew, spelt, oat pancakes! And we like to take frozen berries and make a syrup.
I am so sorry about the allergies. Brenden was milk and soy allergic but he did outgrow it! Allergists, like all doctors, disagree with each other on lots of things. So also do your own research and keep notes on foods and reactions so you know for yourself. But with some allergies it is more of an immature stomach insensitivity. If that is the case, then totally keep it from him and one day when he is older then maybe he can tolerate it.
Otherwise, I say it's the best time possible for allergies. Now there are lactose free milks (as well as almond, soy, coconut milks), egg substitutes and gluten free products. Go check out your gluten free aisle to get a start with some mixes as you learn recipes and ways to adjust your recipes. More later and definitely praying!

So sorry to read about the possible allergies...:( No fun and quite frankly very overwhelming.

Around age one Noah began reacting to dairy (all forms) and nuts. Almost two years later he has out grown the dairy allergy. Thank you, Lord!
We still deal with the nut allergy, but in my opinion that SOOO much easier than milk and wheat. We will be praying that sweet David will out grow these allergies too.

Side note, we ended up getting Noah tested (prick test) around 14 months. The results were helpful. We took him to a pediatric allergist in Nashville. Hang in there!
